Cheese was one of my favorite weed varieties back in the day. When I discovered that living soil leaders Snowtill Organics released its own variation known as Gouda, I furiously searched for an eighth like a hunter in big game country. And while I was a bit nervous about smoking this modern take (Cheese got me a little too high in my college days), I was happy to learn that Snowtill’s Gouda could quite possibly be the perfect strain for 2024 me.

Living soil cannabis is having a moment, and brands like Snowtill are at the forefront. Using soil’s natural microbiome to feed the plants the nutrients they need (versus hydroponic mediums, which use water), this cultivation practice results in exquisite terpene-rich buds you have to smell to believe. After a recent workday visit to the Snowtill facility, I could literally hear people whisper about my dank odor from across the office.

Gouda has a fabulously funky aroma that truly resembles its namesake. Hints of citrus and fuel are overpowered by a ripe dairy bouquet that brought me right back to my days as an au pair in the Dutch countryside. The flavor was less cheesy and more of a spicy, sour affair with notes of dirt and dank swirling in the smoke.

For me, the Gouda high is incredibly chill and balanced. Not quite high but not quite stoned, Gouda offers the best of both worlds. I found myself floating through my day in a state of zen, completely unbothered by the common annoyances that, at any other time, would irk me. A lot of weed makes me anxious lately, but not Gouda, putting it in contention for my new go-to.

If you’re lucky enough to see Snowtill in your local dispo, do yourself a favor and snag a jar or two. Gorgeous stinky buds and phenomenal smoke will not disappoint.
